I made a recipe from an online site.
I am doing a lot more cooking, and we are loving becoming more home focused.
Beloved used to worry working then cooking wore me out. However each day I am finding the energy to do so. The dishes may wait until morning but a decent meal is had in the evenings.
So anyway I happened on to 9 lbs of pork roasts. 5 roasts in one bag. I made 3 of them with my home made sweet n sour sauce and they lasted us for 3 days of dinners and 1 supper. Beloved even made sweet n sour pork salad for sandwiches.
I wanted something different so I began searching for roasts with sweet potatoes.

I decided to do this meal with one of my pork roasts.
I did make some changes. I used Mrs. Dash garlic and herb instead of the onion powder, I tossed the sweet potato cubes with oil and ginger and nutmeg, and I added a bit more water.
I found the roast tasted more like turkey breast and it seemed dry to me and not very flavorful. With high bp I can not add salt. The Mrs Dash is usually very capable at flavoring things but this time not so much.
The sweet potatoes were excellent though!
Today for dinner I will remix the left overs with some spices and make a rice dish out of them.
I like the site and plan to explore it further.
